REC: Butter Toffee: This is what I'm giving instead of baking this year.

My sister sent me this recipe and I've made four batches. Each has come out perfectly. I'm sure everyone will like it if I can keep my husband from eating it all!

Butter Toffee

1 cups toasted almonds
2 sticks butter
tsp. salt
1 cup sugar
6 Tbsp. Light corn syrup
6 oz. Semisweet chocolate (either mini chips or chopped)

Take 1 cup of the toasted almonds and roughly chop. (I left some whole) Toss over lightly buttered cookie sheet. (I used Silpat) Set aside.

Take remaining cup toasted almonds, finely chop and set aside.

Melt butter. Add sugar, salt and corn syrup and stir until sugar is dissolved. Turn heat to med- high and bring mixture to boil while stirring frequently. Boil until it reaches a caramel color or 300*. (about 5-7 min.)

Pour toffee over nuts on sheet pan and quickly spread as thin as possible with a buttered spatula. Immediately sprinkle with chocolate, wait about a minute, and spread chocolate over toffee. Top with chopped nuts and slightly press nuts in to adhere to chocolate.

Cool until chocolate has set and toffee is no longer warm. Break into bite sized pieces.
