You may prep all the ingredients a day or 2 days before Christmas, i.e., scramble the eggs, make white Mornay sauce; saute leeks & mushrooms; prepare spinach (either frozen or fresh); chop up the ham; and then all you need to do Christmas morning is to assemble everything in the buttered phyllo dough and bake it.
