Chicken & Tortilla Soup -- love this! >>
(use the big bowls -- this is yummy!)

Pull meat from the bone of a roasted chicken
from the grocery deli

Put chicken pieces into a soup pot; add:

48 oz chicken broth
3 stalks celery, chopped
1 onion, chopped
1 carrot, chopped
handful parsley, chopped

Bring soup to a boil, then simmer until
veggies are tender, about 15 minutes.

Meanwhile, wrap in foil and bake at 350 for
15 minutes:

12 corn tortillas

Prepare the toppings:

handful cilantro, chopped
1/2 lb Monterey Jack cheese (pepper Jack is
1 avocado, peeled, sliced, salted, and
with lemon juice

When tortillas are hot, stack them by 3’s
and cut into
1/2-inch strips.

Put tortilla strips into soup bowls then
ladle soup over.
Top soup with cheese, cilantro, and avocado -
- mmmm!!
