Roasted Olives with Lavendar and Truffle Oil

- this is just awesome!!...
it's a variation on the recipe I posted for olive paste with lavendar and truffle oil and in MHO this version is far better. it got raves last night.

Roasted Olives with Lavendar and Truffle Oil

8 oz. imported whole black olives such as Alfonso or Gaeta*
1 tsp truffle oil**
1 tsp. food grade lavendar
1/4 cup olive oil
a pinch of crushed red pepper

preheat the oven to 350

in an 8 inch baking pan spread the olives,add the truffle oil and lavendar and mix. bake for 45 min, stirring the olives at least 3 times. cool before serving. I served these with Italian bread and fresh goat cheese as an appetizer.

* kalamatta olives worked just fine.

** when the olives cool, taste them and add more truffle oil if you like.
