I had an appetizer party last night and out of 14 dishes...this was a clear winner: Artichoke Nibble

It was served in 2" triangles and I think it would be a wonderful addition to a brunch table:

Artichoke Nibbles

12 oz. jar marinated artichoke hearts, drained and chopped (save liquid)
1/4 c. chopped green onions
1 clove minced garlic (I use two...:)

4 eggs, beaten
1/4 to 1/2 c. fresh breadcrumbs
1 c. chopped parsley
2 TBS. white wine
1/4 tsp. oregano
1/4 tsp. salt
1/4 tsp. pepper

2 cups grated cheese: cheddar, mozzarella and parmesan

Saute artichokes, onions and garlic in some of the oil from the artichokes. Beat eggs, add wine, parsley, oregano, salt and pepper and sauteed vegetables. Mix in the cheese. Pour in 7 x 11 baking pan. Bake at 325 degrees for about 25 minutes. Let cool, and cut. And, of course, eat.
