Unusual-sounding, but it tastes great, looks great (bright green), and is so easy. This can also be served as a dip with root-vegetable chips.

Roasted Garlic and Lima Bean Crostini

Serves 4

2 heads roasted garlic
1 cup frozen lima beans, defrosted
1/2 cup olive oil
1/4 cup grated Parmesan
1/4 cup chopped fresh mint
2 tsp lime juice or to taste
Pinch cayenne

Squeeze garlic out of heads and place in food processor. Add beans and olive oil. Process until smooth. Stir in Parmesan, mint, lime juice, cayenne, and salt and pepper.
