These reminded me so much of the Starbucks snowballs that I was looking for (which they no longer make), so I took this recipe and did my own thing. Instead of the red velvet cake mix, I made my own favorite deep chocolate cake. Then I crumbled it together with the can of cream cheese frosting like the recipe, and made them into balls-

For the rest, I made a 7-minute frosting, coated the balls, then rolled them in coconut and chilled-

Eureka!!! They are just like I remember them! The only thing I would change is that next time I would make them bigger :)
