After much practice, I’m almost an expert at making this type of omelet. This past weekend was my biggest success. I use my heavy-duty 10” nonstick fry pan. I use free-range organic brown eggs. I finely slice one scallion including half of the green and about a quarter cup of Swiss cheese. Swiss Emmenthal is best.

If you haven’t made this type of omelet, I urge you to try it because it’s sooo good!
