We were doing BLTinis this summer and they were out of this world. After steeping the vodka in shredded romaine, peppercorns, a clove of garlic, a halved jalapeno, and cooked pepper bacon (drained well on towels), stain the vodka and freeze it, all of the fat turns solid, strain it off, filter the vodka, then use V-8 to make the BLTini. Garnish with a cocktail pick spiked with a jalapeno stuffed olive, a cocktail onion, and a cherry tomato. They're beautiful and quite the treat for brunch!
