Dh's work had a "Healthy Balance" lunch and this was one of the recipes... I've tweaked it a bit. But we use it often with leftover chicken.

(sized for 1 serving - increase as needed)

4 oz cooked chicken breast
2 T fat free mayo (or new Heart healthy mayo)
2 T plain lowfat / non fat yogurt
2 T scallions, thinly sliced
2 T fresh parsley, chopped
2 T red bell pepper, chopped fine
2 T celery, diced
1/4 t dried basil

I've also added chopped up grapes, almonds, and a couple chopped up hard boiled egg whites to the mix.
