foil-and-broil system described, but use a torch if you have one. I have an 11-inch tart pan somewhere, but instead I made Julia's dough for two 9-inch tarts, then made 1-1/2 times the filling recipe for the two tarts. One is still in the fridge to be caramelized tomorrow.
