...KA mixer just can't do 7 to 8 cups of flour under the dough hook. It's an old soldier... 20 years of bread, cookies, cakes, etc., next year.
I make two loaves because the first one is usually 2/3 gone before it is completely cooled! I don't see why you couldn't put it in the fridge to rise; take it out the next day and continue on with forming the loaf and letting it rise the final time in the pan.
