which are brushed with the cognac syrup, then arranged cut side against the bowl to reveal the layers of cake and cranberry jam. The center is layers of the remaining cake, syrup, and custard. After it is assembled, it's best to let it sit in the fridge a day. Then the whole is topped with the Cognac Crème Chantilly. Totally festive. I decorate with hollysprigs and sugared cranberries.
