Cooked avocado is awful, and the color changes too. Cook the egg, then put on avocado.

I like it better that way. If the avocado is room temp, the hot egg warms it anyway.

I often use browned butter to spread on toast. Then smash an avocado onto the warm toast, sprinkle with flaked salt......delicious. Add a little Piment de Espelette to the smashed avocado too for an extra kick!
