I used my own crust recipe (well; not mine. the one with vodka in it. Makes making the crust quite ounce for the pie, an ounce for deb, etc.)

I cooked the apples Saturday night and chilled them overnight in the fridge, and assembled and baked the pie the next morning. Simply a divine pie!
