Pumpkin Cookies

Recipe By: Caprial Pence
Serving Size: 36
Yield: 3 dozen cookies

Ingredients:

1 cup unsalted butter, melted
1 cup sugar
1/2 cup brown sugar
1/3 cup pumpkin puree
1 egg
1 teaspoon vanilla extract
1 1/4 cup flour
2 cups old fashion oats
1/2 cup toasted chopped pecans
1/2 cup chopped dried cherries
Heaping 1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 teaspoon salt
1/2 teaspoon baking soda

Directions:

1. Pre-heat oven 350 degrees

2. Place the butter, sugar, brown sugar and pumpkin puree in the bowl of a mixer. Mix well. Add the egg and vanilla and mix until smooth. Add the flour, oats, pecans, cherries, spices, salt and baking soda and mix well. Spoon onto a well greased sheet pan and cook until golden brown about 10 minutes. Let cool about 3-5 minutes then remove from the pan. Eat or store in an airtight container.
