200 g starter at 80% hydration
500 g bread flour
325 g water
1.5 teaspoons salt
1/2 teaspoon curry
1/4 teaspoon turmeric

dissolve starter in water, mix well

add all other ingredients except salt

autolyze 20 minutes. Add salt

bulk fermentation for 5 hours (folds several times at intervals, leave last 2 hours undisturbed)

shape -

ferment 4 to 4 and a half hours

bake
