A local European-style deli carries a selection of meats from Smoking Goose in Indianapolis. I purchased their Speck and the Salumi Cotto. Both are transcendental. The speck, sliced thin like prosciutto melts on the tongue and the scent is like a perfume. The Salumi Cotto, is unbelievable. Fenugreek seeds and garlic. The most amazing taste. It too literally melts on the tongue. I can't wait to visit the store in Indianapolis on my next drive by on my way to Chicago. They also have beautiful rendered leaf lard. I cannot wait to try it in my steak and ale pie.
