Not sure I see how these would "seal" or stay together?

I overlooked the link and seeing that her "cutlets" are basically breasts sliced in half makes it easier to see that they would seal. They look delicious, and the mustard and kraut would make it interesting. Might could even do it with pork tenderloin!!
