The broth was just so fantastic, and I used a whole chicken that was 5 pounds so I cooked it for 20 minutes at high manual pressure,. I also added a stalk of lemongrass because I had it.

I fell asleep while it was cooking (long week) so when I woke up it was in the "keep warm" mode for 54 minutes, but the chicken was not overcooked at all.

Great pho all week, plus the broth was rich and had great gelatinous qualities, which to me is the mark of a good stock. I had lots of leftover chicken and made a chicken salad for a snack yesterday, plus the remainder is going into a risotto tonight.
