This is not something that my husband would ever order in a restaurant or would THINK that it would appeal to him, but gosh darn-it if he didn't absolutely love it!.

The cake was super easy. I'm not sure if I've ever made a sponge before this!

What was really scrumptious about it was her filling which was a recipe for Tahitian Vanilla Pudding. I can't find the darn recipe though - anybody else willing to give it a try? it's page 255 of her book. The recipe is a tad complicated because it calls for steeping a vanilla bean in milk and cream. But since I didn't have one, there was no steeping involved and it was so easy to make. I just added everything to the pot in order after the 'steeping' stage and upped the vanilla to 1 Tbsp. Make sure you strain it once it's cooked. It was absolutely divine!
