Crab Cakes with Cool Lime Sauce

Serving Size : 6

2/3 cup mayonnaise
1 tablespoon fresh lime juice
1/2 teaspoon cayenne
2 cans crab meat (1 lb.) -- drained and flaked
1 cup dry bread crumbs -- divided
1 jar pimientos
2 tablespoons green onions -- minced
2 tablespoons butter

COOL LIME SAUCE:
1/2 cup mayonnaise
1/4 cup sour cream
1 tablespoon fresh lime juice
2 teaspoons lime zest

Mix mayo, lime juice and red pepper. Add crabmeat and 1/2 of the breadcrumbs, pimientos and green onions. Form into 8 patties about 1/2" thick; coat in remaining bread crumbs. Cook patties in butter in large nonstick skillet over medium heat 3 minutes per side or until browned and heated through. Serve immediately with Cool Lime Sauce.

COOL LIME SAUCE:
Mix all ingredients and chill.
