Oriental Asparagus Salad

1 pound asparagus, cut into 2 inch pieces
2 Tbs. soy sauce
1 Tbs. vegetable oil [Pat uses peanut oil]I wonder if toasted sesame might work too)
1 Tbs. vinegar
1 tsp. sugar
1 tsp. sesame seeds, toasted
1/2 tsp. ground ginger (Pat uses fresh)
1/4 tsp. ground cumin

In a saucepan, cook asparagus in a small amount
of water until crisp-tender, about 3 to 4 minutes.

Drain well and place in a large bowl.

Combine the soy sauce, oil, vinegar, sugar,
sesame seeds, ginger, and cumin; pour over
asparagus and toss to coat.

Cover and chill 1 hour. Drain before serving.

Yield: 4 servings
